This exceptional lot of Pink Bourbon coffee comes from producer Alexander Vargas Osorio, grown on his farm La Piragua in the Huila region of Colombia. Located at 1,800 meters above sea level, La Piragua benefits from mineral-rich black soils and cooler temperatures due to its high elevation—ideal conditions for growing high-quality specialty coffee in Huila’s tropical climate.
Alexander’s Pink Bourbon has gained national acclaim, earning 22nd place in the 2020 Colombia Cup of Excellence, 7th place in 2021, and reaching the finals again in 2022. The Colombian Cup of Excellence is one of the most competitive specialty coffee auctions in the world, making these accolades a significant achievement.
La Piragua spans 10 hectares and cultivates a diverse range of varietals including Caturra, Java, Geisha, Tabi, and Pink Bourbon. In addition to coffee, Alexander also grows dragon fruit on 2 hectares of the farm, promoting crop diversity and sustainability.
Pink Bourbon is an Ethiopian landrace variety known for its floral aromatics and bright citrus notes. This particular lot undergoes 36 hours of anaerobic fermentation in whole cherry inside sealed barrels equipped with degassing valves. After fermentation, the coffee is pulped, washed, and dried for 15 days in a solar drying shed until it reaches a moisture content of 10.10%.
