On the cupping table, this coffee unveils an enticing aroma of ripe plums, followed by delicate thyme notes, all complemented by a luscious, rainbow sherbet-like character. Produced by Edier Perdomo, this Pink Bourbon coffee highlights the dedication and expertise required for exceptional coffee processing. The semi-wash process begins with the careful selection of ripe Pink Bourbon cherries from the Los Pinos and La Primavera farms in Huila, managed by Edier Perdomo and Diego Horta. The cherries undergo a 24-hour pre-fermentation in their skins, followed by a 36-hour anaerobic fermentation in bags surrounded by mucilage blankets, enhancing the beans' unique flavor profile. Drying takes place on raised beds for 15 days to achieve optimal moisture content.

Legend has it that this unique bean, distinguished by its pink hue, resulted from a serendipitous cross between Red and Yellow Bourbon varieties. Thriving in Huila’s rich volcanic soils and ideal altitudes, Pink Bourbon captivated farmers with its exceptional cup profile, offering flavors of sweet caramel, delicate florals, and hints of tropical fruit. Its resilience in diverse microclimates and adaptability to varying altitudes solidified its place in Huila’s coffee culture.
