In 2018, Juan Felipe embarked on a journey with Finca La Reserva, a dormant high-altitude farm with rich soil. Recognizing its potential for exceptional coffee despite its challenges, he took a chance. The farm offered a distinctive setting within a protected natural reserve abundant in biodiversity. A remarkable discovery was made: Chiroso, a resilient and promising coffee varietal. Through the dedication of skilled producers, Chiroso gained acclaim in the esteemed Cup of Excellence competition, bringing recognition to the Urrao region. Flourishing in cooler climates, this slender-cherryed wonder boasts impressive yields.

Yet, the tale of Finca La Reserva extends beyond mere revival; it delves into the essence of the bean itself. Chiroso undergoes a meticulous, multi-stage fermentation process. Each cherry is meticulously hand-picked at peak ripeness (23 degrees brix) to ensure optimal sweetness. After an initial 36-hour fermentation in Grainpro bags, the cherries are pulped and subjected to an additional 96 hours in their mucilage. The true magic occurs with the innovative application of CO2 injection, fostering an anaerobic environment that encourages the growth of specific flavor-enhancing bacteria, resulting in a multifaceted and nuanced cup profile. Finally, the coffee undergoes a slow drying process on raised beds, meticulously preserving the delicate flavor notes cultivated throughout processing

Every bag begins with a fresh roast, never warehouse stock. We roast coffee in small batches and ship it shortly after, sealing in the vibrant aroma and flavor so it reaches you at its peak. From roast to doorstep, we make sure your coffee’s journey is as short and as fresh as possible.

Shipping Information

We aim to process orders within 1–2 business days, though in some cases it may take up to 3–5 business days.

Most orders are then shipped via USPS Priority Mail or USPS First Class/Ground (Local Zones), with an estimated transit time of 1–3 business days from the shipment date. Other carriers may be used at our discretion.

Once your order ships, you’ll receive a tracking number to follow your package every step of the way.
