This exceptional coffee comes to us from our trusted partner Steve of Unravel Coffee Merchants. While renowned for his deep expertise in Ethiopian specialty coffee, Steve has recently expanded his sourcing to El Salvador, working closely with innovative producer Carlos Pola. At Finca Las Brisas, located in Ojo de Agua, Juayúa at an altitude of 1,300 meters, Pola practices regenerative agriculture—an environmentally sustainable method that fosters biodiversity and reduces the need for synthetic fertilizers and pesticides. These practices are essential for preserving the future of specialty coffee production in El Salvador, a region facing increasing environmental and economic challenges.
This lot features the Parainema varietal and an innovative Dehydrated Honey process. After being carefully picked and sorted, the coffee cherries are stored for 48 hours in breathable bags in a shaded, ventilated area, allowing for oxygen exposure. During this time, the mucilage naturally dehydrates and oxidizes, enhancing the coffee's flavor complexity. The cherries are then depulped with minimal water and placed on raised beds to dry, retaining more mucilage for a richer cup profile.
Finca Las Brisas also grows several other unique coffee varieties, including Castillo, Limonares (Heirloom Hybrid 2), Pacas, and Heirloom Hybrid 1, contributing to the farm’s diverse and dynamic offerings.
