You can tell from the outset that Beanspire faced an uphill battle, yet they are still producing exceptional coffee. Like our friends at Cedro Alto, who supply some of our Colombian coffees, Beanspire is a Thai-only collective that works hands-on with farmers to help them access international specialty markets. At Mostra, instead of focusing on self-promotion through specific trade types or certifications, we prioritize making the biggest impact by sourcing the best coffee available.

This coffee hails from the Doi Phu Khaa region, specifically from the Gem Forest coffee mill in Nan Province near the Laos border. The mill is operated by Kaleb Jordan, who grew up in this region with his American-born parents. After university, he returned to his hometown, looking for ways to support the local villages, and improving coffee crops and their distribution became his calling. We are also currently featuring an excellent robusta he processed. This Arabica honey coffee comes from cherries of mixed varieties sourced at up to 1500m on Doi Phu Khaa. Kaleb's coffee was ranked 1st in the inaugural 'Best of Thailand' competition, a COE Pilot program, this year.

For this experimental coffee, Kaleb implemented a process called "Kombucha White Honey." Coffee cherries are harvested, floated, and pulped immediately. Then the pulped coffee is submerged in spring water and sealed in a barrel with a 1:50 inoculation of kombucha (made with local microbes) for 36 hours at 25°C, still leaving some of the mucilage on the parchment. The coffee is then removed from the barrel and shade-dried without removing the mucilage. Drying time is about 20 days.
