Light Roast
Nawin Yaesorkoo is recognized as one of the most innovative coffee producers in Thailand. At 37 years old, he represents the third generation of his family’s coffee legacy, having inherited a coffee plantation from his parents. This marks the seventh consecutive year of Beanspire’s close collaboration with Nawin. His brother runs one of the largest cafés in Chiang Rai, while Nawin himself operates a small café in town and manages one of the largest coffee mills in Mae Suai.
Mae Suai is among the largest coffee-producing regions in Thailand and is home to around 500 Akha hilltribe farming households. The region cultivates a diverse range of coffee varietals, including Catuai, Typica, Chiang Mai, and SJ133. Notably, SJ133 is genetically identical to Costa Rica 95, and Chiang Mai is a unique local hybrid developed from SL28, Caturra, and Híbrido de Timor.
This particular lot features a Yellow Honey process with partial fermentation. The coffee was removed from the fermentation tank before completion, leaving some mucilage on the parchment. This results in a flavor profile that combines the bright acidity of a washed coffee with the smooth body and sweetness of a honey-processed coffee.
The green coffee underwent rigorous post-harvest processing, including destoning, hulling, size grading, and multiple passes through a density table. It was then carefully hand-sorted to ensure top quality. To preserve freshness during export, the coffee was packaged in triple-layered bags: an outer cotton sack, a High-Density Polyethylene (HDPE) liner, and an inner hermetically sealed GrainPro bag.
